Fiesta Beef Salad

This Fiesta Beef Salad recipe is one that I came up with while following a low carbohydrate, high protein program.  One serving of this salad has 1-2 cups of lettuce, so have a large salad bowl ready for each person.  Most diets recommend eating at least 2 cups of vegetables at each meal, so this salad will fulfill those requirements.

I recommend and use Walden Farms brand salad dressings as a no-sugar, no carbs option. The Chipotle, Ranch and Thousand Island flavors will work well with the seasonings in this salad. I have included affiliate links to Walden Farms’ products, below, so that you can check them out.

Not on a diet? No problem. This recipe can be used as a filling for tortillas and taco shells to make your own tacos or burritos. Just add your favorite toppings like salsa, sour cream, guacamole, cheese, etc.


Ingredients: Ground beef, cayenne, cumin, chili powder, lettuce, tomato, green onion, jalapenos, salad dressing

Beef Mixture (2 servings)
1 lb. cooked, ground beef (drained)
1 teaspoon cayenne
1/2 tablespoon cumin
1 tablespoon chili powder

After you have cooked the ground beef, drain the grease in a colander and return the beef to the pan. Add the spices and stir to mix well with the beef. Adjust the seasonings to your preferences by adding more or less of each. If the mixture seems too dry, add 1/4 cup of water to help stir the spices into the beef. After everything is heated through, divide the beef mixture into two 8-oz. servings.  Use one 8-oz. serving for your salad while the mixture is still hot. Store the remaining 8-oz. serving in the refrigerator (or freezer) for later use. Reheat by placing the beef mixture in the microwave for 2-3 minutes.

Salad (per serving)
1-2 cups torn leaf lettuce
1 tomato chopped
1 green onion, sliced
1 tablespoon Walden Farms brand no-sugar salad dressing of your choice
8 oz. of cooked beef mixture (hot)
Jalapeno slices, as desired

Prepare a large salad bowl for each serving. To each salad bowl, add lettuce, tomato and green onion. Add jalapeno slices as many as desired. Add salad dressing. Add 8 oz. of hot beef mixture. Stir all ingredients and enjoy.

Variation: If you are not on a low carb diet, this same recipe can be used to make tacos or burritos. Mix all ingredients in a bowl and use to fill individual tortillas or taco shells. Top with salsa, cheddar cheese, sour cream or your choice of toppings.
